Spending my holiday in the kitchen

I can’t believe how great it is to be on holiday!I haven’t had a proper summer holiday for years and even though it’s currently raining cats and dogs here in Copenhagen I’m so enjoying my time off.

The day before yesterday was actually sunny and I took the opportunity to run 3 km across town to meet one of my friends (and 3 km back again).It was a great way to get in a workout and she didn’t mind me sweating :-)

And then I went into full-on housewife mode.As I mentioned in my previous post I try to schedule the fun things along with the tedious ones so after cleaning the house yesterday I went shopping for groceries:

Flour, nuts, seeds and yeast for lots of bread!

After a lot of hours the kitchen looked like this (thank God the husband wasn’t home)

The way I cook is most often to get an idea from a recipe, such as Jenna’s cinnamon walnut bread, and then I change it before starting out hence the pen and notebook and usually end up with a great result.

Results of yesterday’s fun in the kitchen was:

Jam with: 1) Strawberries, a bit of raspberries and star anis.2) Apricots and orange zest

And then I also made some rye-bread which is currently cooling and some 100% wh*le wheat bread a total of 25 buns and 9 breads.I stuck most of it in the freezer as I love to have homemade bread for lunch and dinner available whenever I need it.

I’m so glad that I took the time to just be 100% in the moment and enjoy myself.It’s not very often that I have time to spend 7 hours baking and cooking so yay for holidays :-) And what could be better than starting today with a fresh bun with homemade jam
